Cauliflower Chocolate Protein Fluff 
Sounds gross I know. But I swear I really couldn’t taste the cauliflower, it just tasted chocolatey and fluffy! Or maybe that’s just me being used to weird food combinations…

Ingredients: 
- 1 cup of steamed cauliflower, frozen
- 1/4 cup of flavored whey protein (chocolate, vanilla or other flavor)
- 1 tbsp unsweetened cocoa
- 1/2 cup water

Whisk mix with an electric whisker for 5-8 minutes until it gains volume. Enjoy immediately.

Protein Pear Chocolate Pudding
3 ingredients: 1/4 cup of chocolate flavored casein powder + 1 pear + 1 tsp cocoa. 
Cooked in the microwave for 2 min at 600W followed by 2 hours in the fridge.

Sugar-free gummy bear pudding
Ok, this is not the healthiest pudding since these sugar-free gummy bears contain artificial sweeteners, but it’s easy and you can make it in the microwave.  

Ingredients:
- 1/4 cup sugar-free gummy bears (or any other sugar-free gummy candy) 
- 1/3 cup water
- 1/2 cup unsweetened almond milk (this is the kind of milk with the lowest amount of sugar. Regular milk would also work fine but comes with milk’s natural sugar, about 6g for 1/2 cup)

Put gummy bears and water in the microwave for 1-2 minutes at 900W or until the gummy bears melt away. Add milk and stir. Let it cool. Place in the fridge to firm up. (Or put it in the freezer for faster results). Decorate with the gummy bears who skipped the trip to the microwave :)

Simple Protein fluff
This is just:
- 1/2 cup of frozen strawberries
- 1/2 cup water
- 1/4 cup unflavored whey
Beaten for more than 5 minutes with a hand mixer until the mixture gets fluffy. 

Chocolate chia seed pudding

Egg-riched brown rice pudding

Protein Nutella
A substitute for Nutella (a delicious hazelnut spread very popular here in Europe but full of palm oil and sugar)

Ingredients:
- 1/4 cup of vanilla whey protein
- 1/4 cup of casein protein
- 2 tablespoons of cocoa
- 1/2 cup of milk
- a few drops of hazelnut flavoring

Mix everything together (or blend with a hand mixer if you’d like a smoother consistency) and enjoy.  

Quick Pumpkin Mousse
It’s a pity we don’t have Jell-O instant butterscotch pudding mix here in Europe. But I think it can work too if you make some traditional pudding with skim milk and cornstarch and let it cool before using it in this recipe.  

green tea tiramisu made with Greek yogurt, skim milk and gelatin in place of mascarpone. Ladyfinger cookies are dipped in green tea with lime juice. Ladyfinger cookies are low in fat but they do contain white sugar, so I didn’t add any agave or sweeteners to the mix. I topped the tiramisu with pistachios to add a bit of color.  

A quince jelly I made yesterday evening cooking two quinces with 5 grams of agar-agar and a few dried cranberries.

Pistachio pudding

At first I was a little bit skeptical about using avocados for desserts. But avocado can actually be mixed with sweet things too, particularly if you add some vanilla extract to balance its taste. In a lot of Asian countries, avocado is used more like a fruit than a vegetable.

Ingredients for 2 persons: 2 avocados, about 50 pistachio nuts, a small glass of soy milk, 1 tablespoon of vanilla extract, 3 tablespoons of agave nectar.



After blending everything together you get a tasty, creamy, dairy free pistachio pudding that tastes like pistachio ice cream.
