PMS-cookie: because sometimes a girl just needs a cookie…
Ingredients for one cookie:
- 1/2 avocado
- 1/4 cup vanilla protein powder
- 1 tablespoon cocoa
- 1 to 2 squares of dark chocolate
Mix avocado, protein powder and cocoa in a food processor or using a hand blender. Chop dark chocolate and add to the mix. Bake for only 10-12 min at 180-200 degrees Celsius. (Be careful not to overbake that cookie or it’s going to be too dry.)
The nutrition facts for the cookie are: 457 kcal, 31 g of protein, 27.5 g of carbs, 7.5 g of sugar, 27.5 g of fat, 11.5 g of dietary fiber. If that’s too much for you, you can save 168 kcal, 7 g of sugar and 12 g of fat by omitting the chunks of dark chocolate.
Comparatively, a double chocolate chunk cookie at Starbucks is about the same amount of calories but with 37 grams of sugar and 3 grams of fiber.

Fig Walnut Protein Cookies
Ingredients (for 12 small cookies):
- 1/2 cup walnuts (50g)
- 3 dried figs cut in small pieces and soaked in 1/2 cup warm water for a few hours
- 1/3 cup casein protein powder
[I used an unflavored casein powder but a flavored casein powder (chocolate for example) would be a great choice. Casein gives the cookie dough an elastic texture. The cookies would be a lot less chewy and a bit dry if you make the recipe with whey protein in place of casein.]
Directions
Mix all ingredients (including the soaking water from the figs) together in a blender. Form little cookie balls by hand and place them on a non-stick cookie sheet. Bake 15 minutes at 220 degrees Celsius or until cookies look golden brown.

Post-workout cookie dough pudding
Ingredients (makes 2 servings):
- 1/4 cup of flavorless casein protein powder
- 1/4 cup of vanilla whey protein powder
- 1/4 cup chickpeas
- 1/2 cup of milk
- 2 tbsp chocolate chips
Mix 4 first ingredients with a hand blender until the mixture gets really smooth and starts to thicken. Add the chocolate chips and stir. Enjoy right away.
Estimated nutrition facts for 1 serving: 204 kcal, 25 g of protein, 17 g of carbs, 7 g of sugar, 4 g of fat.
But I couldn’t help myself and I had the whole thing (two servings, 408 kcal) as a post-workout snack after my spinning class today.
Easy Chestnut Chocolate Cookies I made mixing 1 egg, a small package of cooked chestnuts (about 15 chestnuts), 2 small tablespoons of cocoa and 1 teaspoon of sweetener. Very filling!
Chestnuts, in contrast to most other nuts, contain only small quantities of fat and oil and are very high in complex carbohydrates. They have a low glycemic index and are gluten free.

I made my own carob chip cookies (photo #2) yesterday (with 1 cup of oats, 2 eggs, 1 scoop protein powder and carob chocolate). They look like little malformed monsters compared to the perfect cookies on healthfulpursuit.com :)
Super easy-healthy peanut butter cookies
3 ingredients:
- 1/2 cup peanut butter
- 1/2 cup protein powder
- 1 apple
Put everything together in a food processor. Make little cookie balls with the cookie dough and cook for 15 to 20 min at 220 degrees Celsius (430 F) or until cookies are slightly brown.
Chocolate Chip Cookie Dough Bean Balls
- One can chickpeas, rinsed and drained
- One can white beans, rinsed and drained
- 1/2 cup peanut butter
- 3 tbsp wholewheat flour
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 1/2 tsp salt
- 20 drops vanilla stevia
- drizzle of unsweetened vanilla almond milk
- 1/2 cup chocolate chips
Combine all ingredients (except the almond milk and the chocolate chips) in a food processor until well combined. Drizzle a tiny amount of almond milk in while the food processor is running, just enough to reach a doughy, smooth consistency. Scoop the dough into a bowl and fold in the chocolate chips. Bake at 400 degrees for 15 minutes.
