“Time spent wishing something was easier is time wasted. The things worth going after will be at the end of very difficult roads. That’s the way life works. Don’t sit around and wish things were easier. Get better. People have a tendency to want to make the obstacle smaller rather than make themselves bigger. But you are the only part of that equation that you control.” —LL Cool J’s Platinum diet and lifestyle

hey, can you send me the recipe for your zucchini pound cake? I didn't see it on the post but definitely want to try! I can't believe you can replace butter with zucchini ... this seems absurd (IN A GOOD WAY).

Hi!

I didn’t follow a recipe for the cake, my ingredients were:
- 1 steamed zucchini
- 3 eggs
- 2 scoops of protein powder
- 1 cup of oat flour (or another kind of flour, but no ‘white’ flour)
- 1 teaspoon of baking powder
- 1 tablespoon of vanilla extract
- agave nectar (quantity to taste)

It was ok but this wasn’t the best cake I ever made so I was unsure about posting the recipe on tumblr. I still have to give other zucchini cakes a try. I found a few that I’d like to try:
- www.skinnytaste.com/2009/08/pineapple-zucchini-cake-with-cream.html (without frosting and with agave in place of sugar)
- http://allrecipes.com.au/recipe/12926/zucchini-and-cinnamon-cake.aspx (replacing the ton of sugar with some agave or maple syrup)

two questions: are the sugars from fruits horrible? that is where i get most of my sugar intake from but i am ALWAYS over on sugars. Second, what about sparkling water- good or bad? thanks <3

Thanks for these two good questions!

#1- Sugars from fruits
A detailed article here: www.muscleandfitnesshers.com/nutrition/dieting/diet-doctor-13

The article in a nutshell: sugar from fruits is healthier than regular sugar, but it’s still sugar, so don’t go nuts on fruits. But you can still eat 2-3 servings of fruit per day! Good times for fruit are in the morning and before workouts. Also, try to eat more vegetables than fruits. It’s possible to make healthy desserts with vegetables. With rhubarb or zucchini for example! My veggie-page for inspiration: http://fitnesstreats.tumblr.com/tagged/veggies

#2 - Sparkling water vs. plain water
Sparkling water is ok if it’s still just water: no flavored sparkling waters, no sugar or artificial sweeteners. The gas in the water doesn’t have any harmful effect.
